Head chef Andrew Birse’s experiences include rising through the ranks at E’cco Bistro under chefs Simon Palmer and Phillip Johnson, working alongside Alanna Sapwell at Arc Dining and Wine Bar, head chef at Malt Dining, and most recently, Head Chef at the two-hatted Long Apron, Montville.
